The defaults for the Sale Order can be set by using the Sale Order Configuration. The configuration lets the user set some defaults like mentioning the columns that should be displayed, the header and footer for the printing etc.
Sale Order Configurations : Main Menu> Setup> Configuration/Setups> Sale Order Configuration.
